    happy engagement!

    Jenna & Tyler at the Dunes... both the Scott's & Whiting's spend at least two weekends a month from October to March at the Dunes outside of Yuma.  It's fun.  Heck, I even managed to get most of my family there after Thanksgiving - amazing for the Hendrix's, who think the only camping worth doing is in mountains amongst pine.  I'm thinking we need to pay tribute to the Dunes with a Groom's cake at the wedding.  Immersed in LDS culture, I honestly don't know what a Groom's cake is...I know many other weddings have them, but I'm not sure how & where & why.  I just want the wedding cake to be divinely elegant, but think a small dune cake would be a fitting tribute to the coming together of these two.  

    So all of you cultured & raised outside of Mesa or Utah individuals, please let me know the low down on the whole Groom's cake thing...

    Hmm, I have no clue about the groom's cake. I just remember the armadillo groom's cake with red velvet cake inside from Steel Magnolias (I think it was from that.).

    It sounds like a fun idea. They are a cute couple! I can't wait to see what you come up with.

    This has nothing to do with a groom's cake but rather Amy Chicken. You may not even know that a dish involving chicken is named after you, but it is. Apparently you made it a lot in college and thus Kelly named it Amy Chicken so when she gave me the recipe I too called it Amy Chicken. So dear Amy, now that I "know" you I would like to thank you for my lovely "Amy Chicken" dinner this evening.

    That's hilarious Emily. I wonder what "Amy chicken" is...I honestly don't remember cooking anything but chocolate chip cookies in college...I was the dessert specialist...the rest of the girls were the dinner pros.

    My absolute favorite brownies are a "Debbie's Brownies" recipe from my mother-in-law (Kay). I never call it Kay's brownies, it's always Debbie's & I've even thought & wondered about Debbie before (the brownies are that good). Perhaps I'll ask Kay. You've inspired me.

    Amy chicken is the no-name chicken dish with the goop. Ring any bells? Swiss cheese, sour cream, cream of chicken, croutons? A heart healthy concoction, for sure!

    Ah...the light bulb goes on. I've always struggled with what to call that stuff so it's just "Chicken Stuff" in my recipe files. Maybe I'll convert to "Amy chicken", although I'd really like a much better dish to have my name. It is good & easy though.
